Hummus
¼ cup water
1 can (15 oz) chickpeas (some people use cannellini beans)
3 Tbsp. lemon juice
6 Tbsp. tahini
2 Tbsp. olive oil
1–2 cloves garlic
½ tsp. salt
¼ tsp. cumin
pinch cayenne pepper

1 Tbsp. fresh parsley or cilantro

Using a food processor makes a very smooth hummus. (It might work with a blender or by hand.)

Combine water and lemon juice in small bowl. In separate bowl, whisk tahini and oil together.
In food processor, combine chickpeas, garlic, parsley, cumin, and cayenne. Pulse until minced.  With food processor running, add lemon juice/water mixture. Process approximately one minute.  With machine running again, add tahini/oil mixture until hummus is very smooth. You might need to stop once or twice to scrape down the sides and blend again.
