Area Cooks Share Recipes: Pumpkin Whoopie Pies

A fall favorite; full of spice

2 c. brown sugar
1 c. vegetable oil
2 eggs
1 tsp. salt

1 tsp. baking soda
1 tsp. baking powder
½ Tbsp. ground cloves

½ tsp. ginger

1 ½ Tbsp. cinnamon

1 tsp. vanilla

1 ½ c. pumpkin puree

3 c. flour

Cream sugar and oil. 

Add eggs, salt, baking soda, baking powder, cloves, ginger, cinnamon, vanilla, and pumpkin.  Mix well.  

Slowly add flour to the mixture. Drop by heaping teaspoons onto a greased cookie sheet. Bake at 350 degrees for 10 to 12 minutes. 

Filling:  

1 c. heavy cream

 4 oz. mascarpone cream

 ½ c. sifted confectioners sugar

 1 tsp. vanilla

Whip until stiff.

 Dust tops of whoopie pies with confectioners sugar.
